1 large carrot, grated
1 Zucchini, grated
8 Whole wheat tortillas
3/4 cup skim mozzarella
mix carrot and zucchini in bowl, sprinkle 1/2 cup of veggie mixture over tortillas, top with 3 tablespoon of cheese. Cover with second tortillas, heat up nonstick pan over medium to hot heat place quesadilla in pan cook for one minute on each side or until hot and cheese is melted, cut into four and serve......eat alone or serve with fruit salsa or pico de gallo.........ENJOY.
